There are a handful of methods for emulating PlayStation 2 games on the M1 using macOS.
tellowkrinkle macOS build
This is a fork of PCSX2 built for 64-bit macOS, and downloadable from the tellowkrinle github, and most of the discussion is held on this thread where the author is the opening poster. This is by far the best way to run PCSX2 on the M1 Mac.
Completed releases can be downloaded directly from tellowkrinkle's githb's Releases section, however this may not contain the latest fixes. It is possible to build with the latest version by visiting tellowkrinkle's Action section within macOS Workflows, and downloading the latest Artifacts file.
CrossOver
PCSX2 1.4.0 can be run (an older build) in a Windows 8 64-bit bottle with DirectX installed and DXVK enabled. This works but offers low performance.
Parallels
PCSX2 1.6.0 can be run but offers very low performance.
